Here’s a basic recipe for paneer masala:

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 tablespoon tomato paste
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder (or to taste)
  • 1 cup water
  • 1 (14-ounce) block paneer, cubed
  • 1/4 cup heavy cream
  • Salt to taste
  • Chopped fresh cilantro, for garnish

Instructions:

  1. Heat oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and ginger and cook for an additional minute.
  3. Stir in diced tomatoes, tomato paste, coriander powder, cumin powder, turmeric powder, garam masala, and red chili powder. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. Add water and bring to a boil. Reduce heat to low and simmer for 15 minutes.
  5. Add paneer and simmer for an additional 5 minutes, or until heated through.
  6. Stir in heavy cream and salt to taste.
